Grilled Miso Chicken

Allow me to introduce you to the easiest chicken recipe in the world: grilled miso chicken.  If you don't have miso paste lying around the house, buy some.  {I mean, please would you buy some? Sorry. My britches have been feeling a little bossy today.}

You can find miso at any organic, fancy-schmancy grocery store.  Although, I wouldn't be surprised if you can find it at Kroger or Albertson's since it's becoming so popular.  Miso paste lasts a while since you only need to use a little of it when cooking, plus you'll find inventive ways to use it other than diluting it with chicken stock for miso soup.  Another bonus?  This recipe takes no time at all...so you'll be saying oishii faster than you can spout out a haiku.  Wait. Naturally you can say oishii faster than you can recite a haiku, given oishii is three syllables and a haiku is 17 syllables.  Whatever.  You know what I mean.  Now go cook some chicken.  {I mean, please enjoy.}
Ingredients:

2 Boneless, skinless chicken breasts
3 T. Miso paste
2 T. Soy sauce
1 T. Water

Instructions:

Mix the miso paste, soy sauce, and water in a small bowl until smooth. {The consistency will be almost like a slightly oily peanut butter.} Spoon the mixture evenly over each side of the chicken breasts and cover them in a shallow casserole dish. Refrigerate for about 30 minutes.

After 30 minutes, take the chicken out of the fridge. You may want to scrape off the excess miso before you grill because the miso will burn. I am a grill/char mark fanatic, so I chose to leave it on and scrape any unsavory bits off before serving. Entirely up to you.

In a grill pan on medium high heat, add about two tablespoons of olive oil. {You could also use peanut oil or sesame oil to add another flavor profile to the chicken} Grill the chicken on each side for ten minutes more or less depending on the size of the chicken. Once the chicken is grilled, slice it into chopstick manageable pieces and serve with some steamed rice and braised soy and ginger veggies. {Or whatever your dear heart desires.}
